Plans to develop a whiskey distillery, restaurant and function centre in Colac have been approved by the State Government, providing a boost to the community’s future tourism, employment and economic growth.
The Colac distillery will be a drawcard for whiskey lovers. Head distiller Jimmy McKeown was named Master Distiller of the Year at Icons of Whisky Australia awards late last year.
The proposed distillery will sit on the former Mitre 10 site on Colac’s main street. The unoccupied 6584m2 warehouse on Murray St will also include a restaurant, art-craft centre, function centre, bar and carpark.
The distillery plans to brew an estimated 77,000 litres of whiskey a year and expects to hire up to 32 staff.
